Enzymes in Bakery Products

 

Enzymes used in bakery products are Amylases and Proteases. Since beta amylase found in wheat itself. A supplementation of alpha Amylase enzyme and barley malt are added to wheat flour at the mills. Some bakeries add additinal alpha amylase and protease during dough mixing. There are two kind of amylases, alpha amylase and beta amylase. The amylases act on polysaccharides such as amylose and amylopectin components of starch of the flour. Alpha amylases produce a rather complex effect upon the starch molecule of flour, they dextrinize and liquefy starch. Beta amylases produce dextrin. The sources of amylases are cereal, fungi and bacteria. So the enzyme amylase is a Halal enzyme. The protease enzymes degrade the protein of the wheat flour to break it up into ploypeptides, peptides. The source of protease enzymes used in bakery products are from plant proteinases such as Papin, Ficin, Bromelin, wheat and barley proteinases. It is also obtain from bacteria. So the plant protease enzymes are Halal. If you see the word enzyme or enzymes under the ingredients list of wheat flour or in a bakery product, it means they are Halal.

MAJORITY OF FLAVOR CHEMISTS TOLD MCG THAT IT IS NOT LIKELY TO ADD ALCOHOL BASED SOLVENT IN NATURAL FLAVOR BECAUSE IT IS A HIGH FAT BASED PRODUCTS AND REQUIRES OIL BASED NATURAL FLAVOR.

There are no animal derived ingredients and no alcohol in these Halal bar soaps. Some bar soaps are made with fragrance but no animal derived ingredients. The glycerin used in Mylanta is either made from coconut or palm oil or synthetic.

Revlon Company has informed MCG that ColorSilk hair color products are free from pork and beef derived ingredients. The hydrolyzed collagen in the color formula is obtained from marine animals collagen.  NEW FACTS ABOUT GATORADE PRODUCTS:

 

MCG has spend lot of time investing the Gatorade products since now it is owned by Pepsi Cola company. Pepsi has stopped using alcohol as a solvent in natural flavors used in Gatorade products after they bought the company, so there is no added alcohol in the flavors or in the products. They said all their ingredients are Kosher certified but their products are not considered Kosher because they use co-packers whose lines and ingredients are not Kosher certified. They said that most of Gatorade is produced at their own production facilities. Since they use co-packers, we can not give the Halal status to Gatorade products however the Gatorade products made at their plants can be consumed by Muslims since they said that their ingredients are Kosher certified and there is no alcohol in the flavors. Muslims can find the Gatorade products made at their plants by specific code number or letter on the package indicating that these are made at their plants if the Gatorade company is willing to provide the information about code numbers or letters belongs to their plants for Muslims.
